THE STORY BEHIND GIMMEE DONUTS
How a donut craving turned into a gluten free bakery.
When I went gluten free, there were certain foods I REALLY missed. And a good, old-fashioned, yeast raised donut was right at the top of that list.
Eventually, I decided to something about it.
But I'm getting ahead of myself...

MEET THE BAKER
"I just wanted somebody to give me a donut."
I should probably introduce myself! I'm Ella, and I never planned on becoming a gluten free baker.
I've spent most of my professional life singing, performing, and creating experiences for other people.
Then, in 2020, I was diagnosed with Hashimoto's (an autoimmune diseas), and my functional medicine doctor recommended cutting gluten out of my diet.
Sounds simple enough, right?
Well, there was already a LOT going on. I was dealing with family losses, problems with my voice (which is a pretty big deal when you're a professional singer!), and other major life changes.
And now I was supposed to give up bread too?!
I wasn't exactly excited about that.
So I kept negotiating with the idea of going gluten free.
That continued until December 2024, when my hubs and I took an anniversary trip to Las Vegas. I ate gluten...every day...for FIVE DAYS. And my body, well, it let me know how IT felt about that.
I spent the next month recovering.
And that was it. No more gluten. Officially, officially.
But I still wanted the foods I'd always loved...especially that donut!
This is Ella's personal experience with Hashimoto's and gluten, not medical guidance.

THE DONUT PROBLEM
But I wanted the OTHER kind of donut.
I wanted that old-school, yeast raised, fried donut with the thin, crackly glaze. You know the one!
I'd been baking gluten-free goodies for myself for a while, but in 2026, I decided to figure out that donut once and for all.
After LOTS of experimenting (and tasting!), I started wondering if other people might enjoy my treats, too.
My husband, who's a trained pastry chef, gave me the thumbs-up to start selling. So I took my peanut butter chocolate chip cookies to a few local businesses.
And people LOVED them!
The donuts followed, and that thing I'd been saying all along... "Somebody just GIMME a donut!"...became Gimmee Donuts!
01
Make the treats we love.
It started with one donut I really wanted. Now I get to make treats that bring back all kinds of memories for other people, too. And I LOVE hearing what they remember!
02
Everybody gets a seat at the table.
Whether you eat gluten free or not, you should be able to enjoy something delicious together.
03
Dessert is supposed to be FUN!
I mean, we're talking donuts and cookies! I want people to look forward to their treats, enjoy every bite, and maybe make a few memories along the way.
